PB2 is powdered peanut butter. It’s a great way to get that peanut butter taste, without the fat and calories. We love mixing it into Voskos plain Greek yogurt, or using it when baking. Here’s one of our favorite recipes to make. Note that the batter is just slightly sweet, but the chocolate chips sweeten it more than enough. We adapted it from this recipe.

Ingredients
1 cup whole wheat flour
3/4 cup all purpose flour
6 TBS PB2
2 tsp baking powder
1/2 tsp salt
1/4 cup sugar
1 large egg
1 cup 2% milk
1 TBS vanilla
2 TBS vegetable oil
1/2 cup plain, lowfat VOSKOS Greek yogurt
1/2 cup chocolate chips
Directions
Mix dry ingredients (first 6 listed). Mix liquid ingredients in another bowl. Pour liquid over dry and mix just until incorporated. Add chocolate chips. Spoon into muffin tin lined with liners and sprayed with baking spray. Bake at 350 degrees for approximately 20 minutes.
