Grilled Vegetables with Carrot Tzatziki

Tender, flavorful grilled vegetables are perfectly complemented by our twist on a Greek classic – carrot tzatziki.

Ingredients

  • Carrot Tzatziki:
  • 1/2 lbs. carrots, finely shredded (1 cup)
  • 2 garlic cloves, crushed through a press
  • 3 tablespoons extra-virgin olive oil
  • 1.5 cups VOSKOS Original Plain
  • Grated zest and juice of 1 lemon
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Vegetables:
  • 1 bunch fresh asparagus
  • 1/4 cup extra-virgin olive oil
  • 8 baby eggplants, halved lengthwise (1 lbs.)
  • 8 baby yellow squash, trimmed, halved lengthwise (1 lbs.)
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
