Ready for a great low-carb alternative to mashed potatoes? Using cauliflower instead of potatoes for your traditional “mashed potatoes” is a great, healthy alternative because it’s without all the starch of potatoes. Add some non-fat Voskos Greek Yogurt, and you won’t miss a thing!
Ingredients
1 (5.3-ounce) container plain, fat-free Voskos Greek yogurt
1 head cauliflower, cored and roughly chopped
1 small or 1/2 medium onion, peeled and quartered
2 cloves garlic, peeled
2 tablespoons butter
1/4 cup grated Pecorino Romano cheese
Salt and pepper to taste
Directions
Bring a large pot of water to a boil. (You can boil your cauliflower in some chicken broth for a bit of extra flavor.) Add cauliflower and cook for about 8 minutes or until fork tender. Drain. In a food processor, blend onion and garlic. Add cauliflower, butter, greek yogurt, cheese, salt and pepper and blend some more. You want the finished product to be like a thick puree.
